Brewing recommendations:
Use water with finely ground for Turkish/Greek coffee or regular ground for automatic drip. When making Turkish/Greek coffee try to use a manual grinder if possible and if time allowes. Here are instructions for Brewing Turkish/Greek coffee that was passed down from a great-grandfather who was a prisoner in Turkey and responisble for making perfect cups of coffee for the Turkish commanders during The First Balkan War from October 1912 to May 1913:
Immediately before coffee boils and if necessary, remove from water or take some water out of the pot before adding a heaping tablespoon of finely ground coffee per each cup you plan to make; let the boil rise, but not a heaping full boil. Once the coffee boils, it will not maintain the foam on top and it will not be a perfect tasting Turkish coffee; rather it will be just boiled coffee. Spoon foam into serving cups, then pour coffee into each cup equally.
Greek and Cuban coffee often is served with lots of sugar; in the Balkans, it is served with sugar cubes or Turkish Delight on the side of the saucer or separate plate and guests can add according to taste. Some will provide turkish coffee in the sand and each person can have their individual metal pot.
